It’s not the heat that I don’t like; it’s the humidity.
You’ve surely heard this classic summer complaint, right?
Well, after hearing that colloquialism uttered all summer when the back-to-school season hits our family, I can’t help but think:
It’s not the after-school activities; it’s the crazy schedule.
Yes, school is barely back in session, and I’m already struggling with finding time to make dinner. Even with smart meal planning to know what to serve, I still find myself grappling to get dinner done and on the table, as meal-prep time often conflicts with kid pick-up time. (Not to mention our family’s general household chaos that messes with even the best laid dinner plans.)

I’m excited to tell you to a time-saving trick I’ve learned, as well as a few super-simple dinner ideas to add to your arsenal of family-favorite recipes.
Allow me to introduce you to your new best friend… (his skin is to die for, BTW)

Yep, it’s an already-cooked-to-golden-brown, store-bought rotisserie chicken.
If you’re feeling pinched for time, this delicious little guy can be a family-meal lifesaver.
In fact, if you’re strategic (or are on a tight grocery budget), you can even get TWO days of super-simple dinners out of this little baby. Here’s how…
DAY 1
The first night, serve the chicken to your family straight-up. Simply transfer it to a baking dish and pop it in the oven at 200 degrees while you prep your sides and set the table. (Go heavy on the side dishes, making sure you have 2 cups of meat left over for Day 2.)
DAY 2
Now it’s time to get adventurous…
At first, I used these rotisserie chicken recipes for our Day 2 meals: fast and easy fried rice, chicken Alfredo casserole, and weeknight enchiladas. Over time, though, I experimented on my own, and now one of our family’s favorite Day 2 recipes is Cheesy Ranch-Chicken Biscuit Casserole. I love that the prep time is literally 5 minutes.
Quick tip: If your family devours nearly all of the rotisserie chicken on Day 1, don’t fret. Simply skip past the (more meat-intensive) Cheesy Ranch-Chicken Biscuit Casserole recipe below and use the next recipe instead: Cheesy Bubble-up Chicken And Biscuit Casserole.
Cheesy Ranch-Chicken Biscuit Casserole
All you need to do to get started is mix a can of cream of chicken soup, a small container of sour cream, some Cheddar Cheese, and about half of a ranch seasoning packet with your leftover 2 cups of rotisserie chicken (pulled off the bone). Then stir-in and top the casserole with quartered biscuits.

Cheesy Ranch-Chicken Biscuit Casserole
This Cheesy Ranch-Chicken Biscuit Casserole recipe is so creamy and delicious! It’s the perfect comfort food.
Ingredients
- 2 cups cooked chicken (chopped)
- 10.75 oz can of cream of chicken soup
- 8 oz container of sour cream
- 2 cups Crystal Farms Shredded Sharp Cheddar Cheese
- 1 Tbsp dry ranch dressing mix
- 16.3 oz container of biscuits
Instructions
- Preheat the oven to 350 degrees.
- Spray a 9- x 13-inch pan with cooking spray.
- In a large bowl, combine chicken, soup, sour cream, ranch mix, and 1 cup of the cheese.
- Cut each of the 8 biscuits into 4 pieces. Gently fold half of them into the chicken mixture.
- Pour chicken mixture into prepared pan. Sprinkle with the second cup of cheese and add remaining biscuits to top of casserole.
- Bake for 25 minutes or until cheese is melted and the biscuits are golden brown.

Use the same base recipe and add a few canned items from the pantry to make a cheesy Bubble-up Chicken And Biscuit Casserole. This is an easy way to transform a small amount of meat into a hearty dinner for your family.

Your family will love this fast Cheesy Ranch-Chicken Biscuit Casserole. Add a few more ingredients from the pantry, and you’ve got a Cheesy Bubble-up Chicken Pot Pie Bake.
Ingredients
- 2 cups cooked chicken (chopped)
- 10.75 oz can of cream of chicken soup
- 8 oz container of sour cream
- 2 cups Crystal Farms Shredded Sharp Cheddar Cheese
- 1 Tbsp dry ranch dressing mix
- 16.3 oz container of biscuits
- Pantry “Pot Pie” additions: canned sliced carrots, peas, potatoes, etc.
Instructions
- Preheat the oven to 350 degrees.
- Spray a 9- x 13-inch pan with cooking spray.
- In a large bowl, combine chicken, soup, sour cream, ranch mix, and 1 of the 2 cups of cheese. Add pot pie ingredients of your choice: canned carrot slices, peas, canned potatoes, etc.
- Cut each of the eight biscuits into 4 pieces. Gently fold half of them into the chicken mixture.
- Pour chicken mixture into prepared pan and sprinkle with the second cup of cheese. Add remaining biscuits to top of casserole.
- Bake for 25 minutes or until cheese is melted and the biscuits are golden brown.

Of course, what makes both of these recipes insanely delicious is the CHEESE. There’s Sharp Cheddar Cheese within the recipe and, of course, EXTRA CHEESE sprinkled on top, too.

In the end, what I appreciate most about these easy-cheesy chicken recipes is that they require no thought. They’re simple fixes on a busy weeknight that “get ‘er done.” After a long day of work, and kid-carting, and family chaos… it’s so nice to have something easy to whip together and have on the table in 30 minutes.
These simple dinners allow me to redirect my mental energy toward talking with my family while I prep dinner, instead of getting bogged down with tedious instructions.
More time. More chatting. More cheese, please.
