You can laugh if you must, but I've been known to leave Costco with a cart filled with rotisserie chickens. I will buy 4-5 at a crack. To say I am obsessed with this fantastic cooking short-cut would be an understatement.
Using the chickens I buy during one shopping session, I will shred and bag the rotisserie chicken into enough 2-cup portions to stock our freezer. Then I know at any given moment, I'm already one big step towards having a family dinner on the table.
While a rotisserie chicken can make a yummy dinner just on its own with your favorite side dishes, I love using the seasoned and tender meat as a base for everything from casseroles to soups. When you can catch one on sale, it often offers you a larger portion of meat than you would have gotten for the same price raw and you save the time in having to cook it yourself.
