You can laugh if you must, but I’ve been known to leave Costco with a cart filled with rotisserie chickens. I will buy 4-5 at a crack. To say I am obsessed with this fantastic cooking short-cut would be an understatement.
Using the chickens I buy during one shopping session, I will shred and bag the rotisserie chicken into enough 2-cup portions to stock our freezer. Then I know at any given moment, I’m already one big step towards having a family dinner on the table.
While a rotisserie chicken can make a yummy dinner just on its own with your favorite side dishes, I love using the seasoned and tender meat as a base for everything from casseroles to soups. When you can catch one on sale, it often offers you a larger portion of meat than you would have gotten for the same price raw and you save the time in having to cook it yourself.
Saving time AND money? SOLD.
Our family’s favorite rotisserie chicken recipes include everything from comfort food classics like Pot Pie to spicy “make your own takeout” dishes like Fried Rice. We turn to these ideas again and again. I hope you find one that your family loves, too!
