The best part of this carrot pancakes recipe is it can be made in less than 5-minutes if you have a Pancake Starter Mix on hand (via All She Eats). The Pancake Starter Mix recipe below can be used to make carrot pancakes, hearty pumpkin pancakes, applesauce pancakes, banana pancakes, or even banana chocolate chip pancakes.
- 1 cup non-bleached flour
- 2 Tbsp brown sugar
- 2 1/2 tsp of baking powder
- 1/2 tsp of salt
Combine all the ingredients and store in a dry place. For a make-ahead breakfast option, measure out single-recipe portions of the dry ingredients into several mason jars or Ziplock bags for future use!

- 1 cup flour
- 2 Tbsp brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 egg
- 3/4 cup milk
- 3/4 cup mashed or finely grated carrots
- 2 Tbsp vegetable oil
- Combine all ingredients in mixing bowl and stir until well combined.
- Add the wet ingredients and mix well.
- Cook on a lightly greased griddle or frying pan at medium-high heat.
- Serve and enjoy!
*For a make-ahead breakfast option, measure out single-recipe portions of the dry ingredients into several mason jars and put lid on to keep them fresh. Tape a list of the wet ingredients that are needed to mix up the recipe.
* 3/4 cup of mashed or grated carrots can be substituted with many things; including pumpkin, apples or applesauce, or bananas.
*Add nuts or chocolate chips as desired for extra flavor and texture.
