This week I was making our standard energy bites recipe with our two girls when we realized we were out of chocolate chips. Many energy balls list chocolate chips as “optional,” but at our house they are a requirement.

When I thought about the approaches shared in The Artful Parent, I realized the missing chocolate chips were an opportunity for us to get creative with our standard recipe.
We found some cocoa and the girls “strung two unrelated ideas together in a new way.” We experimented and created a protein ball that tasted like a Reese’s Peanut Butter Cup.
Cocoa-Peanut Butter Energy Balls
Here’s the printable recipe for you!
- ½ cup Peanut Butter
- 1t Vanilla
- 3T cocoa powder
- ⅓ cup Honey
- ⅓ cup Maple Syrup
- ½ cup ground flax seed (I used golden flax from Bob's Red Mill)
- 1 cup Old Fashion Oats
- 1½ cups Rice Crispies
- In mixing bowl, combine peanut butter, vanilla, cocoa powder, honey, and maple syrup.
- Add remaining ingredients and stir until evenly coated.
- Shape dough into bite sized ball, approximately 1-inch round.
- Refrigerate in an airtight container.
These cocoa-peanut butter energy balls are insanely delicious. What we loved? Instead of hoping for a chocolate chip, EVERY bite had cocoa-peanut butter goodness. Couple these with a glass of milk and you’ll be in heaven.
